Great news for diners at Tolleys' We are now offering a menu for just £10.00 for two courses and £13.50 for three. Plenty of choice and available from 5.00pm till 6.30pm Tuesday, Wednesday and Thursday.

We intend to change the menu regularly using fresh produce in season.

Trinity's Psychic Evening

What a tremendous response there was to last night's psychic night in aid of Trinity Hospice.

Almost 80 guests turned up the to hear the guest psychic reveal astonishing news from the

''other side''

The hotpot supper was well received and another date has been arranged.

Health inspection

Just had our health inspection and the young lady from Wyre Borough was both helpful and full of praise .

The chef's nightmare personified in a white coat and hat.....

Steve and myself showed the inspector around the kitchen and public areas and discussed the new point's system that the Government is implementing.

The bottom line is that there is no room in any restaurant for sloppy, unhygienic practices.

Valentine's Dinner

Book now for a great evening to celebrate Valentine's. We are offering a three course dinner specially composed to reflect the theme of the evening for only £25.00 to include coffee and chocolates.

In addition to this menu we are offering a Champagne menu to include, Champagne and canapes on arrival to the restaurant to be followed by a selection of starters. The main course is a full Chateaubriand fillet cooked to your requirement and carved at your table by Clive Tolley himself. This can be served with sauces, au poivre or Diane. The evening is completed with a selection of desserts and coffee.

The Champagne menu is available for £40.00 per guest which must be paid for prior to the evening.

Friends of the Hospice Psychic Evening

On Wednesday evening, Trinity Hospice held a fundraiser in our Lancaster room. There was stalls from Bling it on Jewellary, The pashmina ladies and Christmas cards from Trinity. Over 80 guests attended to have readings from Marilyn the psychic from Heysham. Our hotpot supper went down a treat!

Nearly £700 was raised!

... we have been running 'a Night in the Kitchen' for nearly two years now! If you don't all ready know about it, I'm here to help:

'A night in the Kitchen' is our cooking demonstration evenings run on a Monday or Tuesday. Dishes are quickly assembled for you to sample plus easily to follow recipes, all while you sit and enjoy a glass of wine (or two) and see how the professionals (Clive Tolley) work.

It's just £20.00 per guest!

We currently have 10 sessions...

1: Intro: soups, pasta, vegetable and potato cookery, rice pilaf with a chicken dish to accompany plus loads of helpful tips to include the mystery of the yorkshire pudding, gravy and sage and onion stuffing

2: puddings and pastry: sticky toffee pudding with caramel sauce, bramley apple pie with sauce anglaise, creme brulee, brandy snap basket and a suprise at the end

3: fish and poultry: halibut with mussels, pan friend duck breast, chicken saltimbocca, chicken poele, sauce vierge, tuna steak

4: lamb: learn the secrets of lcooking lamb, braised stuffed shoulder of lamb, westmoreland hot pot, frangian tart, salda seviche, mayonnaise

5: Thai and vegetarian: egg fried rice, sweet and sour pork, duck and bean sprouts wraps, stir fry noodles, ricotta cheese, spincach + red onion cannelloni, vegetable risotto croquette,

6: four course dinner: tuscany bean soup, delice of sole suchet, sauteed fillet of pork with spiced pears and pan haggerty, lemon tart

7: winter warmers: beef bourginonne, lamb moussaka, walnut and choclate roulade,

8: Italian: minestrone with pesto, fresh pasta..tortellini, sage and gorgonzola sauce, lasagne, tomato sauce, spaghetti and spinach frittata, tiramisu, foccacchia bread

9: puddings and pastry 2: apple and blackberry roulade

10: dinner party: chicken consumee sevigne with quenelles, roast fillet of beef with wild mushrooms and a sauce bearnaise, lemon and rasberry mousline

This delicately flavoured dish is served with thyme and Maderia jus

Gressingham duck breast with cranberry chutney
Tender slices of roasted duck meat on a sage and potato rosti sweetened red wine glaze and house made cranberry chutney

Locally reared, roasted fylde turkey with traditional garnishes
A grand helping of the seasonal bird with chipolata sausage, sage and onion stuffing and roast gravy

Fillet of beef stroganoff (£6.50 Supp.)
Tender strips of prime English beef fillet quickly sauteed, flamed wth brandy and served with a creamy button mushroom sauce and poached rice

Wild mushrooom and buffalo mozzerella tart
